Immunity “Egg” Salad

Ingredients

1 pack of tofu (no firmer than medium firm)

¼ cup tofu mayonnaise

1 – 2 tablespoons mustard (preferably Dijon)

¼ cup fresh celery, diced, or  ½ teaspoon celery powder

½ teaspoon turmeric (for health benefits and color)

2 tablespoons finely chopped scallion (green onions) or chives

Black salt to taste (or sea salt)

Black pepper to taste

Preparation

Tofu: Drain tofu. Cut into “egg salad” sized cubes. Lay out on a paper towel or kitchen towel. Place another towel on top and press gently to remove excess water.

Other Ingredients: Mix other ingredients with a spoon of fork well in a salad bowl. Add tofu once other ingredients are well mixed and gently stir.

Serve: How ever you like your egg salad! Sandwich, lettuce wrap, on top of a bed of lettuce, or just plain!
