Ingredients
½ block of soft or silken tofu
⅓ cup light olive oil or any other neutral oil (neutral flavor is important!)
1 tablespoon lemon juice
1 teaspoon apple cider vinegar
¼ teaspoon dijon mustard
Salt to taste, about ¼ teaspoon, or more if you like your mayo salty
Preparation
Add all ingredients to a blender and blend until smooth.
