Raw Pad Thai

Juice Dr. Pad Vegan Pad Thai

Ingredients

Sauce

⅓ cup soaked raw cashews (for at least 4 hours but can be overnight)

2 tablespoons tamari

1 tablespoon lime juice

1/8 teaspoon chipotle chili

1 date

1 garlic clove

1/4-1/2 can unsweetened coconut milk

Pad Thai

1 cup kelp or zucchini noodles

1 carrot gradded

1/2 cup pickled cabbage

1 handful sprouts of choice

2 tablespoons crushed cashews

1 teaspoon sesame seeds (I like black sesame seeds)

Preparation

Put all sauce ingredients in blender and blend. Add in coconut milks as needed until desired consistency is reached.

Assemble Pad Thai, and top with cashew crumbles, sesame seeds and sauce!
