Raw Rainbow Vegan Gazpacho

Ingredients
4 tomatoes
1/2 orange bell pepper
1 celery stalk
1/2 sweet onion
2 cloves garlic
1 tablespoon lemon juice
3 tablespoons balsamic vinegar
1/2 teaspoon salt
1 teaspoon fresh parsley (dried if needed)
1 teaspoon fresh basil (dried if needed)
Freshly cracked black pepper to taste
Sprouts of choice (optional)
1/4 jalapeño (optional)
Preparation
Roughly chop all ingredients and blend in high power blender. To make the gazpacho a little spicy, add in the jalapeño.
Blend until smooth. Pro tip, if you’re trying to keep it raw, but want want something warm, continue blending until blender warms up the soup (5-10 minutes depending on how powerful your blender is)!
Garnish with sprouts of choice.
