Raw Strawberry Truffles

1 pint organic fresh strawberries
1.5 cups cocoa powder
1/2 cup protein powder
1/4 cup maca powder
1 cup maple syrup
juice of 1 lemon
zest of 1 lemon
2 cups cashews
1 tbsp vanilla extract
1/2 cup almond butter


In a food processor, combine strawberries, maple syrup, lemon juice and zest, vanilla extract, and almond butter.

Blend until smooth, then add cashews.

Blend until smooth, then add protein powder, maca powder, and add cocoa powder last. You should be left with a thick, brownie batter consistency. Add cashews and cocoa powder if needed.

Once desired consistency is reached, remove mixture from the food processor and put it into a bowl.

Cover and refrigerate to set for about an hour.

Take it out and roll mixture into bite-sized balls.

Optional: roll balls in shredded coconut, cocoa powder, coconut sugar, or whatever you’d like!
