Superfood Tomato Soup

2 16 oz cans crushed tomatoes or 1 lb fresh tomatoes
2 small red Onions
3 cloves Garlic
3 tbsp Olive Oil
1/2 cup Cashews
2 tsp dried Oregano
2 tsp dried Parsley
2 tsp dried Sage
2 tsp dried Rosemary
2 tsp dried Thyme
2 tsp dried Red Pepper
3 tbsp Nutritional Yeast
2 tbsp Miso
2 tbsp Red Wine Vinegar
1 tbsp maple syrup (optional)
Salt and pepper to taste
Preparation
In a large soup pot, rough chop onions and garlic and saute them in the olive oil.
Add oregano, pepper, parsley, sage, rosemary, thyme, basil, and red pepper flakes and let them “bloom” in the olive oil for about 30 seconds.
Add canned crushed tomatoes, or blend up fresh tomatoes and add to the pot. Let simmer for 5 minutes, then take 1 cup of pot mixture and add to a blender with cashews, miso, nutritional yeast, maple syrup, and red wine vinegar. Blend until smooth.
Add blender mixture into the pot and mix thoroughly, until one consistent color is reached. Add water 1/2 cup at a time until you reach desired consistency.
Taste, adding salt as needed. Enjoy!
